Chapter three

The Botanical Heart

Nine botanicals, a single Mediterranean soul.

Alongside the olive, other botanicals used in the distillation carry the story forward.

Three of them come from the family grove — the oil, the wood and the leaves. The other six build the balance around them.

The nine botanicals

  1. Olive oil

    Oil from the family grove, pressed at the Frantoio Pilla in Cuffiano. It is the signature of the project, and its texture.

  2. Olive wood

    Debarked by hand and cut with a bow saw. It brings almond, vanilla and noble wood.

  3. Olive leaves

    The silvery leaves of the same trees. The green, gently bitter note of the Mediterranean.

  4. Juniper

    The berry without which a gin is not a gin. The resinous backbone of the whole distillation.

  5. Verbena

    It brings a bright, familiar note, a simple and dear scent that calls up home, care and tradition.

  6. Liquorice

    A sweet, deep root, traditionally used in gin to give body and length to the finish.

  7. Orris root

    The root of the iris, a historic ingredient in perfumery and distilling: it holds the aromas together and makes them last.

  8. Rosehip

    The fruit of the wild rose, which grows freely along the walls and hedgerows of the Mediterranean scrub.

  9. Oak

    The wood of the centuries-old oak that shades the house and the olive trees. It recalls the oldest roots and the memory of the land.

Sensory profile

What you taste

An openly Mediterranean soul, built around the velvety texture of the oil, which coats the palate and comes fully into its own in a soft, lingering finish.

The heart of the spirit is dominated by the warm, decisive notes of olive wood and olive leaves, flanked by the structural depth of oak and lifted by the vibrant freshness of verbena.

Completing the aromatic architecture, acting as an elegant backdrop, come the light touches of rosehip and the delicate shading of liquorice.
